Make the cheese filling first. Let the cream cheese and butter fully soften at room temperature

Sift in powdered sugar

After the cheese filling is made, put it into a disposable piping bag and store it in the refrigerator for later use

This is to make the pie crust. After the butter is softened at room temperature, add fine sugar and mix thoroughly. Add the egg yolks in batches. Mix well each time before adding the next one. Sift in the low flour and mix until there is no dry powder. Put it into a disposable piping bag (the method is slightly the same as the filling method, so I won’t take photos step by step)

Squeeze the crust part into the mold and use your hands to compact the batter slightly along the bottom and wall of the cup, but do not spread it to the entire height of the cup wall because it will grow slightly during baking

Take out the cheese filling and fill it into the mold with pressed pie crust. Be careful not to make the cheese filling too full

Pour the pie crust into the filling-lined mold and smooth the surface slightly with your hands

Brush the surface with egg wash, then bake in the middle rack of the oven at 180°C for about 30 minutes. Check the coloring of the surface and cover with tin foil
