Brown Sugar Jujube Cake
Overview
Red dates contain many nutrients needed by the human body. Adding brown sugar will make the cake rich in jujube flavor, healthy and nutritious, and very delicious.

Soak the red dates in water for 2 hours in advance.

Remove the pits from the soaked red dates and steam them in a steamer for about 20 minutes.

The steamed red dates are very soft and can be stirred into puree with chopsticks. You can also use a food processor to puree it. (You can also break it with a food processor) Take 150g and set aside.

Chop brown sugar, pour 50g hot water (in the recipe) and stir until the sugar is completely dissolved, let cool and set aside. The red date brown sugar I used has diced red dates in it.

Separate the egg whites and yolks in a clean, oil-free and water-free basin.

Beat the egg yolks with a whisk, add corn oil in portions and mix evenly.

Add brown sugar water in portions and stir evenly.

Add 150g of stirred jujube puree and stir evenly.

Sift in the low-gluten flour and mix evenly.

The mixed batter is smooth and creamy.

Preheat the oven, add a few drops of lemon juice or white vinegar to the egg whites, and beat at high speed.

Beat until dry peaks form.

Add one-third of the egg white to the red date batter and mix evenly.

Pour the mixed batter back into the remaining egg white bowl and continue to mix evenly.

The mixed batter is thick and smooth.

Pour into an eight-inch square plate lined with greaseproof paper, shake out any bubbles, and place in the preheated oven at 160 degrees Celsius for about 40 minutes.

Take out the parchment paper and let cool.

Cut into cubes. The jujube aroma is strong.
