Soak the chicken hearts in water and wash them. Cut the chicken hearts with scissors to remove the debris and blood inside, and remove the membrane and chicken fat on the surface.

Soak the processed chicken hearts in water with baking soda for 5 minutes, then clean them.

Cut the processed chicken hearts into strips, add salt, ginger, green onions and cooking wine and marinate for 30 minutes. Add oil to the pot, stir-fry until it changes color, remove and set aside.

Put the base oil in the pot, add the green onion and ginger and sauté until fragrant. Turn up the heat and add the pre-cut green pepper shreds and add a little salt.

Stir-fry the green pepper shreds for a while, then add the chicken hearts and stir-fry together. Add a little light soy sauce, dark soy sauce, and pepper. Before serving, pour a little vinegar on the edge of the pan, stir-fry twice and serve.
