Cut tofu into small pieces, fry over medium heat until both sides are slightly brown, set aside

Chop the ginger and garlic into small pieces and stir fry the tofu until fragrant

Add pickled peppers and stir-fry bean paste till fragrant

Pour in an appropriate amount of boiling water, add a spoonful of light soy sauce, an appropriate amount of pepper, and a small spoonful of sugar

Pour in the fried tofu and cook for four minutes, add the gravy, chicken essence and turn off the heat
