A new recipe for an old dish - steamed seabass. I have made this dish many times before, but I have never tried adding fish sauce as a seasoning. This time I tried adding it, and I can only say one word: full of praise. The fish sauce tastes salty and has the umami flavor of fish, which does not conflict with the sea bass itself. Wash the seabass, drain the water, and beat it with a knife on both sides to make it easier to steam and flavor it.

Spread salt on both sides (including the fish head), then spread with vinegar, sprinkle with shredded ginger, put it on a plate and let it rest for 10 minutes

After the water in the pot boils, put the bass in the pot over high heat for 10 minutes (you have to watch the time, the fish will become old if it is steamed for too long)

Start preparing the seasoning. Pour an appropriate amount of soybean oil into the pot, mince the green onion, sauté until fragrant, then add an appropriate amount of steamed fish drum oil and stir, then add the chopped green and red pepper shreds and stir-fry until soft, add mature vinegar, and prepare the fish sauce

(Remember! Pour off the fish sauce on the plate before pouring the seasoning.) After pouring the sauce, cover the pot and turn on the fire for 30 seconds. Then use the remaining heat to "steam" for five minutes without removing the lid.
