Overview
Chicken fir fungus is a very famous snack in Yunnan. It is made by washing fresh chicken fir fungi and tearing them into small strips, then adding Sichuan peppercorns and dried chili peppers to a large pot of oil and frying them. After squeezing out the water in the chicken fir fungus, the chicken fir fungus oil can be used as seasoning or eaten as a dish. The taste is dry and chewy.

Wash the soybean sprouts you bought in water.

Blanch the washed soybean sprouts in a pot of boiling water and then rinse them in cold water.

Peel the garlic and mince it into minced garlic, and chop the green onion leaves into finely chopped pieces.

Put the soaked soybean sprouts into a large bowl.
