Cheese Baked Purple Sweet Potato
Overview
Purple sweet potatoes have always been popular. Just looking at the color is already very attractive. However, although purple sweet potatoes have many benefits, they have less water and are often choking when eaten directly when steamed. Inspired by the baked pumpkin and sweet potato, I decided to bake the purple potato as well. After adding light cream, butter and egg yolk, the purple sweet potato has a much smoother texture and is easy to swallow. However, out of caution about the amount of oil, I was not willing to use as much oil as possible, and instead reduced the usual amount of oil by half.

Two purple sweet potatoes

Wash, cut the round ones in half, cut the long ones from one-third, and take two-thirds

Put into the electric stew pot

Simmer over water for 2-3 hours

Cook until cooked

Use a knife to score a mark 0.5 cm from the edge

Dig out the purple sweet potato flesh along the knife marks

Get three empty purple sweet potato bowls and purple sweet potato

Pour the light cream into the purple sweet potato meat and mix well

Add butter and mix well

Add egg yolk and mix well

Add honey
-
Mix well

Fill the purple potato puree into the purple potato bowl

Sprinkle with mozzarella

Put in the oven, middle layer, heat up and down at 190 degrees, bake for 10-15 minutes

Golden on the surface, out of the oven
