Wash and shred the tofu skin.

Peel, core and grate the apples, grate the ginger and mince the garlic.

Blanch shredded tofu in a pot of boiling water. Remove from cold boiling water and drain.

Add shredded apple, ginger, sugar and salt, mix well and marinate for about ten minutes. Add chili powder, pepper powder, and minced garlic on top.

Add Sichuan peppercorns to the vegetable oil and fry over low heat until the Sichuan peppercorns are fragrant. Remove the Sichuan peppercorns and pour the hot oil onto the minced garlic and chili powder.
