Steps

  1. grams of mutton, cut the lean meat into small cubes about 1.5 cm or into large pieces 0.5 cm thick and 2 or 3 cm long. Cut the fat into smaller pieces, about 1 cm. I chose the mutton from Shanxi Youyu, which is tender and tender.

  2. grams of Russian hot sauce (you can replace it with Thai sweet and spicy sauce), 10 grams of cumin powder, 2 grams of white pepper, chili powder according to your own taste, and 5 grams of salt (my family uses slightly less salt).

  3. spoon of light soy sauce (10g), 2 spoons of cooking wine (20g), shred 90g of onion or cut into small pieces, use a garlic press to press out the juice from 20g of it (onions will make the mutton tender and tender).

  4. Put all the ingredients into the mutton basin, mix well with your hands, and knead for a while. Cover with plastic wrap and refrigerate for at least 3 hours.

  5. When preparing to skewer the mutton skewers, pour 10g of oil into the mutton box and stir evenly. When grilling lamb kebabs in the oven, a lot of water is consumed, and mixing in cooking oil will lock in some of the moisture in the meat.

  6. When skewering meat, the fat and lean meat should be spaced apart. I usually skewer a small piece of fat meat first, then two or three pieces of lean meat, and so on. I made a total of 19 skewers out of 500 grams of meat.

  7. After finishing all the skewers, I didn't want to eat too much at one time, so I put two portions in the refrigerator, 6 skewers each.

  8. Preheat the oven to 230 degrees Celsius, place a baking tray with aluminum foil, and place a rack on the upper middle layer with the baking tray underneath. Bake for 8 minutes first.

  9. Take it out and brush it with some oil (because it was for dinner, I didn't brush it with oil), and sprinkle some cumin powder and chili powder (not included in the ingredient list). Turn the mutton skewers over and sprinkle some cumin powder and chili powder (not included in the ingredient list). If you like more salt, you can sprinkle some more salt. Bake again in the oven for 8 minutes.
