Cold razor clams
Overview
Today, a friend came to my house for dinner. I always thought that boiling razor clams would be easier, so I put them on the plate. I didn’t expect that they would taste so good if they were slightly cold!

Pour the razor clams into the water and boil, and add a few slices of ginger

Peel off the razor clam shells, drain and set aside

Put an appropriate amount of minced garlic at the bottom of the plate

Cut cucumber shreds on the bar (you can also put some blanched carrot shreds here, the color will look better)

Arrange the razor clams evenly on top and top with appropriate amount of light soy sauce, balsamic vinegar and a little red oil
