  1. Cut the potatoes into cubes, slice the pork belly, cut the mushrooms in half, shred the red pepper, smash the garlic and cut the squid into strips.

  2. Pour oil into a hot pan, add pork belly and fry until the oil is released.

  3. Add red pepper, squid and mushrooms and stir-fry until fragrant.

  5. Add a bowl of water, add garlic cloves and dark soy sauce, bring to a boil over high heat. Reduce the juice over low heat.
