My father loves to eat ginger. I buy some ginger every year when it is on the market. The simple way to eat it is to eat it cold and soak some ginger. The way I made this year’s ginger is super crispy and appetizing. It is a must-have with porridge and noodles. Friends who like to eat ginger have collected it and made it. It’s super simple.

Prepare the raw materials, scrape off the skin of the ginger in advance, wash and dry it, and peel the garlic.

Slice the ginger into random slices, mince the garlic, and put it into an oil-free and water-free container. The cutting board and knife should be sterilized by boiling water in advance and dried.

Add the salt and sugar to the ingredients.

Add chopped peppers, or chopped fresh peppers. In that case, add more salt than in the recipe, because chopped peppers contain salt.

Wear disposable gloves, mix all the ingredients and marinate for 30 minutes to allow all the flavors to blend, then add the high-strength white wine in the recipe and mix well again.

The mixed chopped pepper and ginger will pickle a lot of soup, so don't throw it away.

Put it in a sterilized glass jar and leave it at room temperature for one day before eating. It would be better if there is room in the refrigerator to keep it refrigerated.
