Cut beef, carrots and potatoes into cubes.

Put beef in cold water, pour in cooking wine and blanch.

Press in a pressure cooker for twenty minutes.

Add oil to the wok, stir-fry the rock sugar, add the pressed beef and stir-fry until the sugar color turns, add the dark soy sauce, stir-fry evenly, add the potatoes, stir-fry the carrots and then pour in the water.

Add salt, soy sauce, onion, ginger, and pepper and turn to high heat.

Collect the soup, add chicken essence and coriander and serve.
