  3. Blanch spinach (in order to reduce oxalic acid, spinach contains oxalic acid. The combination of oxalic acid and calcium in food will produce calcium oxalate. Calcium oxalate cannot be absorbed and utilized by the human body, so eating spinach regularly will cause calcium deficiency.)

  4. Pour the blanched spinach into cold water, take it out and drain it, then cut it and put it on a plate for later use.

  5. Beat the eggs, add a little salt, a little water, and a pinch of cooking wine, stir evenly, and add some chopped green onion (the scrambled eggs will be fluffy, fresh and not old, and will taste better with chopped green onion). Of course, if you don’t like green onions, you can omit them.

  7. Light the fire (medium-low heat) and pour salad oil or rapeseed oil, depending on personal circumstances (I don't like salad oil, it has no taste, but home-pressed rapeseed oil is fragrant). Then pour in the egg liquid and stir-fry slowly.

Light the fire (low heat), add the chopped green onion, shredded ginger, and shredded chili pepper and stir-fry, then add the spinach and stir-fry, add an appropriate amount of salt, it is up to you, you can add a little first to taste the saltiness. Friendly reminder: Before pouring oil for cooking, boil the water in the pot. Otherwise, if you pour onion and ginger into it, the oil will splash around and it will easily get burned. )

  10. Pour the scrambled eggs into the spinach, mix and stir-fry. You can taste it. If it is light, add some salt. Stir-fry for a while and then put it on the plate. (Friends who like it fresher can add a little chicken essence and stir-fry before serving. I don’t eat it, so I omit it)
