Stir-fried pork slices with sweet beans and carrots
Overview
I accidentally saw fresh sweet beans in the supermarket today, so I bought some home and temporarily added a carrot to stir-fry them. This was my first time eating sweet beans. I thought they were peas and should be eaten with the shells peeled off, but I accidentally discovered that they were soft pea pods and could be eaten together.

Pick off both ends of the sweet beans and tear off the old tendons. Use a paring knife to peel the carrots and clean them

Carrots cut into diamond-shaped slices

Cut the fat into thin slices

Cut the lean meat into small slices and marinate with a little light soy sauce, sweet potato starch, and a few drops of water for preparation

Boil water in a pot, add some salt and oil, add sweet beans and carrot slices and blanch for a minute or two

Take out and set aside

Heat oil in a pan, add fat and stir-fry until oily

Add the meat slices and stir-fry after a while to avoid sticking to the pan. Then, add the ginger and garlic slices and stir-fry until fragrant. Immediately add the blanched sweet beans and carrots and stir-fry together. Add salt and mix well and remove from the pan
