Braised pork trotters
Overview
Although I usually talk about losing weight, I still have a soft spot for pig trotters. The reason is not only because it tastes delicious, but more importantly, it has beauty benefits. The fat content of pig trotters is much lower than that of pork, but the collagen content is very high. Eating more pig trotters can prevent skin dryness and wrinkles, enhance skin elasticity and toughness, and is of special significance for delaying aging and promoting the growth and development of children. This dish is bright red in color, soft and glutinous in texture, and delicious in taste. It is a nutritious home-cooked dish.

Prepare ingredients. Two pig trotters, appropriate amount of rock sugar, appropriate amount of ginger, two bay leaves, two star anise, and two dried chili peppers.

Add an appropriate amount of water to the pot, then add the pig's trotters, and then add a little cooking wine. After the fire comes to a boil, cook for another three to five minutes to fully cook out the impurities in the pig's trotters. Then remove the pig's trotters and set aside.

Fried sugar color. Pour an appropriate amount of cooking oil into the pot, then put the rock sugar into the pot and stir-fry over low heat.

Stir-fry until yellow bubbles start to appear from the bottom of the pot.

Put the pork trotters into the pot and stir-fry evenly.

Add ginger slices, dried chili peppers, bay leaves, and star anise to the pot and stir-fry evenly.

Cook a spoonful of cooking wine along the edge of the pot, then pour in a little dark soy sauce for color.

Add appropriate amount of hot water and salt. (You can add a little more water, because it will take a long time to stew) After the high heat comes to a boil, turn to low heat and simmer for about an hour and a half.
