Stir-fried cowpeas with minced meat
Overview
Cowpea is one of the main ingredients in summer. There are many ways to cook it and it is not complicated. Whether it is stir-fried, mixed or grilled, it is a very popular dish. I bought a handful of cowpeas today. I originally planned to make sesame sauce cowpeas, but there happened to be a bowl of leftover meat filling from pie making in the refrigerator, so Suoxing made a dish of stir-fried cowpeas with minced meat.

Main and auxiliary ingredients: cowpea, minced pork, onion and ginger.

Wash the cowpeas and cut into small pieces. Heat oil in a pot, add cowpeas and stir-fry.

Fry until the cowpeas shrink and dehydrate, then set aside.

Leave oil in the pot, add onions and ginger and stir-fry until fragrant. Add minced meat and stir-fry.

Fry the minced meat until white and cooked for 8 minutes. Add reserved cowpeas. After stir-frying evenly, add light soy sauce.

Add salt and MSG to taste. Stir fry quickly and turn off the heat.

Remove from pan, plate, and serve.
