Overview
Stir-fried pork slices with bitter gourd is a popular home-cooked dish. It is very simple, but I use homemade chili sauce, fermented bean curd, and tempeh as condiments. It tastes particularly fresh and delicious.

Cut the bitter melon into two halves, remove the pulp, and cut into thin slices diagonally. Cut the peppers and ginger into shreds, cut the tomatoes into chunks, and mince the garlic. Set aside.

Cut the meat into thin slices and marinate with vegetable oil, salt, sugar, light soy sauce, oyster sauce, cooking wine, etc. Marinate the bitter melon with salt and set aside.

Put oil in the pot, simmer the pot with ginger and garlic until the aroma comes out.

Add the meat slices and stir-fry, pour in the water starch and stir-fry quickly until cooked, remove from the pot and set aside.

Leave some oil in the pot, add bitter melon, tempeh, fermented bean curd, chili sauce, and red pepper and stir-fry until cooked.

Add the fried meat slices and tomatoes, stir-fry, sprinkle some chicken essence to taste, remove from the pot and plate.
