Clean the hairtail, cut into diagonal sections, mix well with cooking wine and salt, and marinate for flavor.

Wash the onions and ginger, cut them and soak them in boiling water.

Dip the pickled hairtail fish in cornstarch on both sides.

Heat the oil in the pot until it is 60% hot, add the hairtail and fry over medium heat until both sides are browned.

Plate the fried hairtail and set aside.
