Prepare the ingredients: leeks, flour, eggs.

Boil water in a pot, knead the dough with hot water, use chopsticks to stir it into a snowflake shape, when it cools down slightly, knead it into a smooth dough with your hands, and set it aside to simmer for about 30 minutes.

Wash and chop the leeks, sprinkle with salt and let it sit for a while, squeeze out the water with your hands, add cooking oil, steamed bun seasoning, dark soy sauce, light soy sauce, and salt and mix well.

Knead the dough into a long strip and divide into equal portions.

Roll it into a round piece and add appropriate amount of leek and egg filling.

First fold the dough in half, pinch the closing piece tightly, and then pinch the two sharp corners toward the middle to form a straw hat shape. Make the rest of the dough in sequence.

Turn on the heat, pour a little oil into the pot, and fry the cake until both sides are golden brown.
