Pour cold water into a pot, add two slices of ginger and bring to a boil. Add chopped and washed pig trotters and boil the blood. About 5 minutes

When the pig's trotters no longer bleed, take them out, wash them in cold water, drain and set aside

Heat 1 tablespoon of oil in a wok over high heat, then turn to medium heat, add remaining ginger slices, garlic and drained pig's trotters and stir-fry for 5 minutes.

Pour into the pressure cooker, add cold water just enough to cover the pig's trotters, add millet pepper, chicken essence, soy sauce, salt, and brine sauce and set the heat to steam. After that, turn to medium-low heat and press for 10 minutes.

Let the pressure cooker deflate naturally after 10 minutes. Then open the pot, pour in 1 teaspoon of balsamic vinegar and remove from the pot. Sprinkle with chives. Serve and enjoy.
