Whitebait omelette
Overview
The whitebait omelette is added with some green pepper shreds and chopped green onions. It is delicious and has a hint of chili shreds. It is delicious with rice. If you like it, try it. I used wild colorful eggs that I just bought at home. You can also use domestic eggs, duck eggs, or quail eggs. Home-cooked food is the most delicious if it suits you.

Prepare ingredients.

Wash the whitebait in salt water and rinse it with water in a vegetable basket. Drain off the water. Add a little salt and mix the fish with cooking wine. (If you want fresh fish, add some salt. Adding salt and stirring briefly before cooking can also remove the fishy smell)

Cut green pepper into shreds. Chop the chives.

Beat the eggs and beat at least 50 times.

Add appropriate amount of salt, green pepper shreds, chives, and whitebait to mix with the fish.

Put a little oil in the pan and heat the pan.

Add the eggs. Turn up the heat before adding the eggs so that they disperse quickly after being put into the pot.

Because I want to take pictures, I fry it over low heat until the edges of the eggs are solidified, then turn over or push the spatula towards the middle.

Turn off the heat when it's cooked. If you fry it for a long time, it will taste stale.
