Honey BBQ Pork
Overview
Barbecued pork belongs to Cantonese cuisine and is one of the flavors of Guangdong. The main ingredient is pork tenderloin, and the main cooking technique is barbecue. The finished product is bright red in color and the meat is tender and fragrant. There are two types of barbecued pork, namely low cabinet barbecued pork and kitchen barbecued pork. Low cabinet barbecued pork is very particular about the selection of ingredients. It must be a meat filet [that is, a strip of meat behind the pork spine, so that it will be juicy and meaty. The cooked barbecued pork must be both fat and lean [with a burnt aroma] to be considered top quality.

The marinating time is at least 24 hours, usually about 30 hours, and turned every 7 or 8 hours.

Take it out to warm in advance and place it on the grill to air dry slightly; preheat the oven to 190 degrees and bake for 20 minutes. Remember to place a baking sheet lined with tin foil underneath to catch the dripping juice.
