Stir-fried meat with onions and eggplants
Overview
I felt a pity for the onions left over from yesterday, and wanted to eat braised eggplant, so I came up with this dish ^ _ ^

Cut the pork into small thin strips, cut the onion into thin strips, and cut the eggplant into strips (my round eggplant has a thick skin so I peeled it off)

Boil the eggplant in water and add a little salt

Seasoning: light soy sauce, brown sugar, a little vinegar

A little oil and fry the meat

Add onions and stir-fry

It will probably change color slightly

Add eggplant and stir-fry until some aroma comes out

Pour in all the seasonings, stir-fry, add a little water, turn on high heat, cover and simmer for a while
