【Tianjin】Chinese steamed buns
Overview
The Chinese knot is a unique hand-knitted craft in China. The emotion and wisdom it displays are aspects of ancient Chinese civilization. Because its appearance is symmetrical and exquisite, it can represent China's long history and conforms to the customs and aesthetic concepts of traditional Chinese decoration, so it is named Chinese knot. The Chinese knot is not only beautiful in shape and comes in various colors, but when combined with the Chinese knot, such as good luck, good fortune and longevity, double happiness, good luck, and a good journey, it expresses warm and rich blessings. It is a masterpiece that praises and conveys sincere prayers and wishes. The Spring Festival is a traditional Chinese festival. The streets and alleys are covered with Chinese knots. The red Chinese knots convey a strong flavor of the New Year. They represent unity, happiness and peace, so they are an indispensable decoration during the Spring Festival and are loved by everyone. Today I mixed red yeast rice flour into the flour and made a Chinese knot-shaped steamed bun. I wish everyone a happy, peaceful and happy new year.

Ingredients
Steps
-
Add a spoonful of red yeast rice flour to the flour.
-
Dissolve the yeast powder in an appropriate amount of warm water, and then add it to the mixed powder of flour and red yeast rice powder.
-
First stir gently with chopsticks, and then knead it with your hands into a soft and firm dough.
-
Cover and let rise in a warm place for an hour or so until doubled in size.
-
Take out the dough and knead it thoroughly until smooth, then roll it into a thin and even sheet.
-
Use a knife to cut into even noodles.
-
Take an appropriate amount of noodles and braid them in a crisscross pattern.
-
You need to be patient and tidy up a little bit to make it neat.
-
Make another square of the same size, cut off the excess edges, and apply some water on the corners to make it stick better.
-
First lay out one of the woven grid squares, take an appropriate amount of dough and roll it into a long and thin strip, as shown in the picture, with one or two more "knots" on the four corners to make it look beautiful.
-
Surround it all around, leaving no gaps.
-
Fill the middle with an appropriate amount of dough so that it looks plump and will not collapse after steaming. (I’m making steamed buns this time, but you can also fill them with bean paste to make Chinese bean buns)
-
Then cover it with another square piece of woven lattice and apply some water to glue it. (I felt that the "" and "rope loops" on the four corners were a bit small, so I temporarily added another loop on the four corners. It's okay if I don't add them)
-
Next, make the tassels. Take an appropriate amount of dough and roll it into thin sheets. Cut it into strips with a knife. Do not cut off the ends.
-
Apply some water and roll it up.
-
Don't forget to insert a noodle in the middle when rolling.
-
Put the Chinese knot into the steamer, cover it and let it sit for a while.
-
Put the Chinese knotted tassels and the rope used for hanging above (to make a noodle of moderate thickness) into the steamer, cover it and let it sit for a while.
-
Steam over high heat for 25 minutes.
-
Turn off the heat and wait for two to three minutes before lifting the lid.
-
When assembled, it becomes a beautiful Chinese knot.
-
I wish you all good luck in the new year.
