Homemade snacks - soda crackers
Overview
Homemade snack series, soda biscuits, crispy soda biscuits have always been one of my favorite biscuits. I never get tired of eating them. Most of the ones sold in supermarkets do not contain very good oil. The ones I bake are even more crispy and delicious, with clear layers and full of sesame flavor. They are also a good choice as snacks,

Mix 100g high-gluten flour, 25g salad oil, yeast, 1/4 teaspoon salt, milk and baking soda,

Knead into a smooth dough and ferment in a warm place until 1.5 times in size (it took me about 40 minutes, it depends on the temperature)

Mix 30g flour, 10g salad oil, sesame seeds and 1/4 tsp salt to make puff pastry,

Mix it into puff pastry,

Drain the air from the fermented dough and knead it into a ball,

Roll it into thin slices,

Fold the left and right sides toward the middle,

Then fold the top and bottom sides in the middle to form three folds,

It is folded like this,

Roll it out again,

Fold it left and right,
-
Fold up and down,
-
Also fold into the shape of a small quilt, (repeat the above action three times,)

Roll out the pastry and place it in the middle of the rectangular sheet,

Fold it up and down, then seal the left and right sides, completely wrapping the pastry in the middle of the dough sheet,

Repeat the previous three-fold action of the dough 3 times, then roll it into thin sheets,

Cut out the shape you like and use a fork to make small air holes on it,

Place on the baking sheet, cover with a layer of tin foil, set the middle layer at 180 degrees for about 15 minutes, then remove the tin foil and bake. (It is best to observe it frequently during the second baking, and bake until the surface changes a little bit.)
