Braised Pork Ribs with Potatoes
Overview
I bought fresh pork ribs this morning and saw the newly grown potatoes, so I thought I’d cook some pork ribs with the potatoes!

Rinse the fresh pork chops, drain and set aside

Wash the side dishes and set aside

Cut the green onion into sections, cut the ginger into thick slices, and pat the garlic with a knife

Cut the potatoes into small pieces with a hob, and cut the green and red peppers into sections

Add a little oil to the pot, when it is hot, add the potato cubes, fry slowly over low heat until golden brown, then take it out

Turn off the heat, stir-fry the green and red peppers with the remaining heat, and serve

Pour an appropriate amount of oil into the pot, when the oil is hot, add the pork ribs, stir-fry over high heat, then turn to medium heat and fry slowly

When both sides of the ribs are golden brown, add red pepper, garlic cloves and star anise, stir-fry

After the garlic is fragrant, add an appropriate amount of rock sugar and five tablespoons of soy sauce and stir-fry until the soy sauce dries up. Stir constantly to avoid burning the pot.

Add hot water to cover the ribs, bring to a boil over high heat, skim off the foam, add onions, ginger, cumin and peppercorns, cover and simmer over low heat for 20 minutes

When the soup is slightly thick, add a tablespoon of salt

Add fried potatoes

Simmer for ten minutes, add green and red peppers

Simmer for three minutes, turn over slightly, and reduce the soup over high heat

Serve it out and eat
