Peel and wash the purple sweet potatoes and steam them over water.

Beat the eggs in a bowl, add salt, starch and water and mix thoroughly.

After the pan is hot, brush a little oil, pour in the egg liquid and fry it into egg skins. Two eggs can make about six egg skins.

Mash the steamed purple sweet potatoes.

Roll the purple sweet potato puree into the egg skin.
