Small fried poached eggs
Overview
Normally, poached eggs are fried for breakfast and not for cooking. I didn't expect to fry them for a little stir-fry. They are also delicious, easy to make, taste good, and more nutritious.

Chop the red pepper, dice the onion, slice the garlic, add tempeh and eggs and set aside.

Put 1 tablespoon of oil in the wok and fry 2 eggs into poached eggs until the egg yolks are solidified.

Use a spatula to break the fried poached eggs into small pieces and set aside for later use.

Add oil to the wok, add diced red pepper, sliced garlic, diced onion, dried tempeh and stir-fry until the diced onion is brown.

Pour in the chopped poached eggs, stir-fry evenly, add salt and light soy sauce and stir evenly. (You should add less salt, because soy sauce is salty)

You can add a little water to moisten the ingredients to allow the flavors to blend better (if you add more light soy sauce, you don’t need to add water), and you can eat it out of the pot.
