Japanese tofu is cut in the middle and the tofu is slowly squeezed out from the top.

Cut into equal-sized pieces and place on a plate.

Beat the eggs with appropriate amount of salt. Beat eggs and water in a ratio of 1:1.2.

Strain the egg mixture into the tofu. Cover with plastic wrap and poke a few holes with a toothpick.

Steam in a pot of boiling water for about 10 minutes.

Pour in sesame oil, pour 1 tablespoon steamed fish soy sauce, and sprinkle with chopped chives.
