Cut the pork belly into shreds and set aside.

Cut chives into sections, mince garlic, shred ginger, cut millet and pepper into rings and set aside.

Add a little oil to the pot, heat over high heat, add minced garlic, ginger and millet pepper and stir-fry until fragrant.

Pour in shredded tripe and stir-fry evenly, add salt and chicken essence.

Pour in a little water and stir-fry until the water dries up.

Add the green onions, sprinkle with a little pepper, stir-fry well and turn off the heat.
