Stuffed Tomato Box
Overview
Our family still makes relatively few fried foods, including this stuffed eggplant box. Because I'm lazy and don't like mincing meat stuffing, and our family's cooking is relatively simple, I rarely cook these dishes. For stir-frying, the meat is all cut and stir-fried. I didn’t cook this dish well today. I feel like it would be better to cut the eggplant thicker. I’ll try it next time.

Cut the eggplant into pieces as shown in the picture

Chop the lean meat together with ginger into a meat filling, add a little salt, cooking wine, light soy sauce, dark soy sauce, white sweet and sour sauce and mix well

Stuff the meat stuffing into the eggplant clips

Take a little fried powder, add some salt, cooking oil and water to make a paste

Put each eggplant box into a layer of fried batter
