Winter Melon and Shrimp
Overview
"House Chef" briefly introduced this dish. I was worried that the winter melon would be difficult to taste. It turns out that using a knife to score small squares on the hard side of the winter melon can help it taste better. The frost is coming, and although the winter melons don’t grow very big, they have to be harvested. Why not try making this dish? So, I designed the recipe based on my memory and my own imagination. Because winter melon is paired with shrimp, in order not to lose the fragrance of winter melon and the refreshing taste of shrimp, it is not suitable to use heavy sauce and heavy color seasonings. Adding an appropriate amount of salt and a little light soy sauce is enough for seasoning, and the color of the dish should not be too dark. This dish is red, green, meaty and vegetarian, healthy and delicious.

Cut the winter melon into long cubes as big as mahjong, and use a knife to score small grids on the hard side, about 1 cm deep. Separate the green and white chives and cut them into pieces;

Peel the shrimps. If there are black lines on the backs of the shrimps, cut 0.5 cm deep on the backs with a knife, pick out the shrimp lines with toothpicks, then put them in a small bowl and add about 1/2 tsp of salt, 1/4 tsp of pepper, 1 tbsp of cooking wine, 1/2 tsp of cornstarch, pickle them with your hands and set aside;

Heat the pot, add oil, add ginger slices and scallions, stir-fry until fragrant;

Pour in the winter melon;

Stir-fry briefly and then pour in the stock (if you don’t prepare the stock, you can add water), about 1 rice bowl, and simmer the winter melon over low heat;

After the winter melon is simmered until translucent, add about 1/2 tsp of refined salt, 1 tbsp of light soy sauce, 1/2 tsp of sugar, sprinkle a little pepper, and evenly simmer the winter melon with the checkered side down for a while;

Turn over the winter melon pieces. At this time, we can see that the juice has seeped into the lattice of the winter melon. Increase the heat and reduce the juice to about half a bowl. Pour up the winter melon and juice and set aside;

Turn on the heat again, add shrimps to the pot and stir-fry until about 50% cooked;

Pour in the winter melon and its juice, sprinkle with a few drops of sesame oil, stir-fry a few times, remove from the pan, and sprinkle some green onions on top.
