Peel, wash and slice the potatoes, steam them in a steamer until soft.

Mash the steamed potatoes into a puree.

Add appropriate amount of salt, black pepper, and 2 tablespoons of flour and mix well.

Mix cooking wine, soy sauce, white sugar, mature vinegar, water and water starch to form sweet and sour sauce.

Shape the mashed potatoes into small balls.

Heat the oil pan until it is 60% hot, add the potato balls and fry over medium heat until the skin becomes hard and take them out.

The oil temperature rises to 80% hot, pour in the fried potato balls and fry again for about 10 seconds, remove quickly to control the oil. The fried potato balls are golden brown.

Pour a little oil into the wok, pour in the sweet and sour sauce and simmer over medium heat.
