Refreshing little cold dish------[Cold Shredded Potatoes]
Overview
During this time, my family eats a lot of cold dishes, one variety every day, never the same. Shredded lettuce was served the day before yesterday, and shredded potatoes were served yesterday. Nowadays, new potatoes are on the market. New potatoes are full of water, crisper and more refreshing when eaten cold, and they are not expensive.

Ingredients
Steps
-
Prepare the raw materials, wash and peel the potatoes, wash and peel the carrots, wash and remove the stems and seeds of the green peppers;
-
Grate potatoes into shreds (or shred them), grate carrots into shreds, and shred green peppers;
-
Wash the grated potato shreds to remove excess starch and soak in water for 5 minutes;
-
Peel and mince the garlic, cut the dried chilies diagonally into sections, and prepare the Sichuan peppercorns;
-
Boil the water in the pot and add shredded potatoes;
-
Add carrot shreds and blanch them;
-
Blanch the shredded green peppers for 5 seconds and quickly remove all the ingredients from the cold water;
-
Soak in cold boiled water for two minutes;
-
Drain the water and put it into a larger container;
-
Add salt, minced garlic, pepper, vinegar and seasoning;
-
Heat the wok and add oil. Add Sichuan peppercorns and chili peppers to the cold pan. Heat over low heat until the Sichuan peppercorns and chili peppers are fragrant. Turn off the heat;
-
Pick out the chopped chili peppers (the dried chili peppers I bought are very spicy, so I don’t need to pick them out. If you like spicy food, you don’t have to pick them out). Pour the hot oil in the pot over the minced garlic and seasonings (commonly known as spicy pepper oil in my hometown);
-
Mix well and serve on a plate! (It will taste better if you put it in the refrigerator for half an hour before eating it)
