Chop the ribs into pieces, blanch them in boiling water, rinse them and set aside.

Peel the potatoes and cut them into small pieces, and prepare a few slices of ginger and one star anise.

Heat oil in a pan, add star anise and pork ribs and stir-fry for five minutes.

Fry until slightly brown and add appropriate amount of salt and soy sauce.

Add two more bowls of water and ginger slices and bring to a boil over high heat.

After about seven minutes, add the potatoes and continue simmering over medium heat.

Simmer until the potatoes become soft, add appropriate amount of salt, soy sauce, and sprinkle with coriander.
