Preserved egg mixed with beans
Overview
Green beans are one of the common foods on the table. I like to eat long beans. Whether they are stir-fried or cold, or used to make stuffed buns, it is also very good. This is the first time I use it cold with preserved eggs. I didn’t expect it to be very delicious. The color and nutrition are well matched

Wash the beans and blanch them in water. They must be cooked. In order to keep the color green and beautiful, put some salt or oil in the water when blanching

Take out the blanched beans and soak them in cold water

Peel preserved eggs and cut into pieces

Take out the beans to control the moisture and then chop them finely, mince the garlic, chop the chili pepper and set aside

Put the garlic and chili into a bowl, pour in vinegar, light soy sauce, salt and sesame oil to make a sauce

Place the sliced preserved eggs on a plate and place the chopped beans on top
