Pork ribs and roasted potatoes
Overview
Pork Ribs Stewed with Potatoes, an authentic farmhouse dish, delicious from snack to adult! At that time, all I ate were pigs raised by myself. There was no refrigerator in my hometown at that time, so the only way to store pork was in winter. The winter in my hometown in Inner Mongolia was very cold, and the pork would be completely frozen if left outside overnight. My father used a large tank to store it, so that he would have meat to eat throughout the winter. The pigs in my hometown are fed with grain, and the meat tastes very delicious. Now it is really hard to buy the same taste. So every year when I go back during the Spring Festival, my parents will prepare some to bring back, including beef, mutton, pork, and game. The freezer is full, which is enough for most of the year.

Thaw the spareribs, cut them into two pieces, soak them in water and wash them thoroughly

Remove the ribs and blanch them in cold water in a pot. Bring to a boil over high heat and skim off the foam. Remove the ribs and set aside

Pour vegetable oil into the pot, and when it’s hot, add star anise and fry until fragrant

Pour in the pork ribs, add onion, ginger and cooking wine and stir-fry

When the color turns yellow, add dark soy sauce and stir-fry for color and light soy sauce for freshness

Pour in water that covers the ingredients and bring to a boil over high heat

Pour into the pressure cooker and press for 35 minutes (for organic ribs, the pressing time will be shorter)

Wash the carrots, peel the potatoes, and cut the potatoes and carrots into small pieces (if you don’t have the gadgets in the picture, use the corrugated end of the grater, and just cut into pieces if you don’t want it to be troublesome). Wash the potatoes with water to remove the starch, and make sure they are non-stick

Pour a little vegetable oil into the pot, add the chopped onions and sauté over low heat until fragrant

Add carrots and potatoes and fry until potatoes turn slightly brown

After the ribs are pressed, pour the soup into the wok, add salt, and reduce the soup over high heat

When the soup is reduced to half, add carrots and potatoes

When there is not much soup left and the potatoes are cooked, turn off the heat and take out the pot (if you like soup rice, you can leave more soup)
