Chop the ham into small pieces.

Boil the purple sweet potato, peel it, and press it into purple sweet potato puree.

Mix flour and glutinous rice flour, add purple sweet potato puree and beaten egg liquid.

Stir evenly with chopsticks, slowly add water, and stir until the batter becomes a paste.

Add the sliced ham into the batter and stir evenly.

Take a flat-bottomed non-stick pan, cold pan, brush with a thin layer of oil, put the batter into the pan (don't put too much at once), spread the batter evenly on the bottom of the pan.

Turn on low heat and heat for about a minute. After the dough is formed against one side of the pan, turn over and heat for about another minute until both sides are fried.

Fry until both sides are golden brown and the middle is cooked through.
