Ham lace bacon pizza
Overview
Every time I saw this kind of pizza with lace, I thought it looked beautiful, but it must be very troublesome to make! This time I did it myself, and I realized that it was not as complicated as I thought, it was just a small extra step. Although it is only a small step forward, the quality will be greatly improved immediately. It is worth it!

First make the cake base. Knead all the ingredients for the dough into a smooth dough;

After about 30 minutes (the room temperature is relatively high now, about 30 degrees), the dough will ferment until it doubles in size. Dip your fingers into flour and poke holes without shrinking or collapsing. The first rise is over;

Take out the dough and deflate it;

Roll out the dough into a larger round piece, then place the pizza pan on the dough and use a knife to remove the excess (just cut off about 60g of small dough). Here I am using a 9-inch pizza pan;

Place the cut dough into a pizza pan and grease the bottom with a thin layer of oil. Cover with plastic wrap and refrigerate for fermentation;

Prepare the ingredients for the filling;

Blanch the okra and cut into small sections, dice the red pepper, fry the bacon and cut into cubes (not too small), cut the onion into rings, cut the mozzarella into strips, and chop the Grana Padano;

Preheat oven to 190 degrees. Remove the refrigerated pizza dough from the refrigerator and rewarm it. Sprinkle a little dry flour on the countertop, roll out the small dough into a long strip, and put the peeled ham on it;

Wrap the ham sausage with the dough, roll it up and knead it a little, then let it rest for 2 to 3 minutes;

Use a sharp knife to cut the ham into sections, each section is about 2~3cm long;

Dip the bottom of the ham sausage segment into some water, then stick it on the pizza dough to form a circle;

Use a fork to poke small holes in the bottom of the pizza dough. You can make more holes, it doesn’t matter;

Brush with homemade pizza sauce;

Top with mozzarella and Grana Padano cheese;

Place bacon, okra, and chopped red pepper, then sprinkle a layer of cheese, repeat, and finally place onion rings on top and sprinkle with some cheese;

After the oven is preheated, put the baking sheet into the oven, heat the middle layer up and down, and bake at 180 degrees for about 20 minutes, until the cheese melts and turns golden brown;

Take out the pizza, use a pizza shovel to transfer to a drying rack and let cool before serving. When eating, you can sprinkle some freshly ground black pepper and cheese powder on the surface, or you can omit it if not available.
