Cut the fish into two parts along the fish bones (this step can be done by the fisherman when buying the fish)

Cut the fish fillets into slices, add salt, ginger, water starch, egg white, pepper and ginger, mix well and marinate in the refrigerator for 3 hours

Cut the prepared tomatoes into cubes and put them into the pot. Stir-fry the tomato juice over low heat. Add a little water (depending on the amount of fish fillets). When the water boils, add the fish fillets and add an appropriate amount of salt and pepper
