Wash all main ingredients

Cut the potatoes into equal length strips and soak them in water and set aside

Cut the eggplant into strips, sprinkle with salt and marinate for 20 minutes to drain the water

Remove the potatoes from the water and fry them in oil

Fry the potato strips on all sides until slightly brown, as shown in the picture

Remove the water from the eggplant strips, put in oil and stir-fry until transparent, take out and set aside

Sauté ginger and garlic slices in oil pan

Add eggplant strips, add light soy sauce, a little vinegar, and sugar and stir-fry

Add potato strips and stir-fry together, add a small amount of water and cook for 2-3 minutes, add salt
