Cut the eggplant into thick slices, soak in water and set aside.

Use a knife to cut off the sac inside bit by bit (don’t throw away the sac!), cut it as thinly as possible, and then throw it back into the water.

Beat the eggs and set aside.

Chop the capsule inside the eggplant and pour it into the egg mixture.

Cut the ham sausage into cubes and add it to the egg mixture.

Dice the carrots and add them to the egg mixture.

Add a little salt and pepper and stir well.

Pour oil into hot pan and add eggplant.

Put the mixed stuffing inside.

Fry until both sides are golden brown.
