Cut the pork loin into strips and cut diagonally along the strips with scissors.

Slice green and red peppers and set aside.

Marinate the pork loin with white wine, cooking wine, salt and white pepper for half an hour.

Add water to the pot. When the water boils, add salt and blanch the marinated pork loin (blanch quickly and remove after the water has passed).

Add oil, ginger, garlic and green onion to the pot, fry over medium heat until fragrant and drain.

Heat the oil over high heat until it is 80% hot. Add the pork loin, add white vinegar and stir-fry evenly. Add the green and red pepper and stir-fry evenly. Add starch to the broth to thicken it, then remove from the pot and serve on a plate.
