Wash and peel the eggplant, cut into shreds and soak in water.

Remove and drain.

Mince the onion and ginger, mince 2 cloves of garlic and slice 1 clove into small pieces. Set aside.

Pour a small amount of cooking oil into the pot, add garlic cloves and minced onion and ginger and sauté until fragrant.

Add the shredded eggplant and stir-fry until the shredded eggplant changes color. Add salt and oyster sauce.

Stir-fry until the eggplant shreds are cooked, turn off the heat, add minced garlic and stir evenly.
