Soak the gelatine sheets in cold water in advance, then heat 100g of yogurt and 28g of gelatine sheets over water and stir until completely combined. Set aside to cool

Add the light cream to the caster sugar and beat until it is still fluid and has texture. Do not over-beat

Pour the yogurt liquid into the whipped cream and stir evenly
