Grilled BBQ Steak Burger
Overview

Kneading noodles: Add the main ingredients into the bread machine bucket in sequence (one egg will not use up the remaining egg wash and meat filling), start the dough kneading program for 50 minutes, take a small piece of noodles at the end of the program, if you can easily pull out the glove film, the dough is ready.

Primary fermentation: Use the remaining working temperature of the bread machine to perform primary fermentation. Because the dough takes a long time to mix, the dough has already begun to ferment, so the dough will ferment to 2 to 3 times its size in about 20 minutes. Poke the fermented dough with your finger. The hole will neither shrink nor dent.

Divide the dough into portions: Take out the fermented dough, use an electronic scale to divide it into 10 equal portions of about 60g each, knead each portion into a smooth round dough, and put it into a baking pan.

Secondary fermentation: Preheat the oven to 40 degrees, put a deep plate of boiling water at the bottom, and place it on a baking sheet for secondary fermentation. The dough will rise for about 40 minutes until it doubles in size.

Brush with egg liquid and sprinkle with sesame seeds: Take out and brush with a layer of egg liquid (10g of egg liquid plus 10g of water to make egg liquid), and sprinkle with a layer of white sesame seeds.

Grill the burger buns: Place the baking sheet into the middle rack of the preheated oven and bake at 180 degrees for about 15 minutes. Take it out and place it on a wire rack to dry until it reaches body temperature. If you can't finish it at one time, you can put it in a plastic bag and store it at room temperature for three days.

Start making the steak: (You can use the time between dough mixing and fermentation to make the steak) Cut the onion into small cubes, peel the garlic and mash it into a puree.

Adjust the meat filling: Add diced onions and minced garlic to the lean meat filling, then add the butter, egg liquid, flour, cooking wine, salt, white pepper and chili powder in the accessories. Use chopsticks to stir clockwise for 5 minutes to fully thicken the meat filling.

BBQ steak: Place in the middle rack of the preheated oven and bake at 200 degrees for 12 minutes. Turn over and bake for another 8 minutes.
