Boil the ribs in cold water, skim off the foam and wash, cut the garlic in half, slice the ginger, and chop the green onions.

Heat the oil in the pan until it is 80% hot, turn down the heat and add the pork ribs and fry them until golden brown on both sides.

Push the ribs to one side of the pot, add onion, ginger, and garlic to the other side and turn to high heat and sauté until fragrant.

Sauté until the garlic is browned.

Add a spoonful of dark soy sauce for color, an appropriate amount of salt to taste, and add hot water that covers the ribs.

Change the cast iron pot (you don't have to change it if you don't have it. If you use a wok, add more water), put the ribs into the pot, pour in the remaining hot water, bring to a boil over high heat, then turn to low heat and simmer for an hour.
