Cut the skin-on pork belly into 3cm cubes, blanch in a pot of cold water and boil for 3 minutes.

While blanching, prepare the seasoning.

After blanching, rinse with cold water and set aside.

Add water and oil to the pot and stir-fry all the seasonings until fragrant.

Add the blanched meat pieces, stir-fry until the oil is released and remove, leaving the oil in the pot. (Don’t fry for too long.)

Add appropriate amount of brown sugar and stir-fry the sugar color over low heat. (Don’t get too old)

Keep the heat low, add the fried meat, and stir-fry until the color is even.

Pour in the beer just enough to cover the meat. Bring to a boil and then reduce the heat to low.

After 20 minutes, add chestnuts and stir.

Continue to cook for 25 minutes, remove all seasonings, add salt, reduce the sauce over high heat, and serve on a plate.
