Overview
Eating pork for health in winter is rich in protein, many minerals, and fat, which is good for your health. In Liaoning, whether we are dining in a restaurant or entertaining guests during the New Year and festivals, the most popular dish among women and children is Guobao Pork. Not only is it bright in color, but it also tastes great, with sour and sweet flavors that are endlessly memorable. Currently, there are two most common types of Guobao Pork in restaurants, one is the old-fashioned Guobao Pork (no tomato sauce, the natural kind), and the other is the one I’m sharing with you today. Ingredients
Steps
-
Cut the pork into large slices, not extra thin
-
Add starch to the pork (add starch according to the amount of pork, first add 30 grams, add a small amount of water and mix well, if it feels too thin, then add starch to it, be sure to mix well. The paste in restaurants is usually very thick, if you like a thick paste, add more starch, I use about 60 grams of starch)
-
It is very important to make a good paste for the pot meat. You must add oil to the water starch, about a spoonful of it, and mix it well (the oil must be added to make it crispy)
-
Grab evenly
-
Add a lot of oil to the pot
-
Many people make a good paste, but it falls apart when fried. Therefore, there is one most important detail that everyone must pay attention to, which is the oil temperature. When frying, the oil temperature should be much higher, at least 70% hot, and do not put all the meat slices into the oil pan for frying at once. Fry in several batches to avoid a sudden drop in oil temperature. After frying for the first time, take it out and fry it again when the oil temperature rises again to make it crispier

Leave a little oil in the pot, add tomato sauce (not tomato sauce), and add sugar
-
About 2 grams of refined salt, rice vinegar (because tomato sauce and vinegar are both sour, so the ratio of sugar should be about 1:1.5. Add an appropriate amount of water, stir evenly, taste the sweet and sour ratio yourself, and adjust appropriately
-
Add the fried meat slices
-
Quickly turn the spoon to spread the batter evenly, take it out of the pan, and sprinkle with sesame seeds
